Weeknights get crazy, hectic, and down right busy! That's why this week I have a recipe that you throw all together and cook; not many steps and not much to think about! Today's recipe is going to be all about simplicity and ease! I hope that you like it! Again I am linking up for the Delicious Dish Tuesday and Tuesday's Recipe Swap (see links at end of post!).
Weeknight One Pan Dinner
(Recipe from Pinterest, adapted from here)
What you need:
- 3 sausages
- small onion
- approx. 5 small redskin potatoes (or whatever kind of potato you choose to use)
- 1-2 bell peppers
- 1/2 small jar banana peppers (or to taste)
- Parmesan cheese
- salt and pepper (to taste)
- *optional seasonings: garlic powder, oregano, crushed red pepper-- to taste.
Make it:
- Preheat oven to 400 degrees.
- Cut up sausages, bell pepper and onion. Dice up potatoes in to quarters.
- Toss everything in to a casserole dish, drizzle with olive oil and seasonings. Mix well.
- Bake for 30-35 minutes.
- Sprinkle with Parmesan cheese and Enjoy!
I also like that this dish is so easy to add and delete to adjust to your family's tastes. You could add some red pepper, delete the banana peppers if that is not your thing. Or you could add small pepperonis or zucchini... really any veggies that your family enjoys!!
