Chicken Caesar Pasta Salad

This week's recipe is a Pinterest inspiration.
I love caesar salad and this recipe, with the addition of pasta, is the perfect blend of salad and pasta for summer!!

Chicken Caesar Pasta Salad



Ingredients:

1 1/2 chicken breasts, grilled
6 oz. penne pasta
4 cups romaine lettuce, chopped or shredded
1/2 med. size cucumber or 2 small ones
1 roma tomato, chopped
2-3 green onions, chopped
1 carrot, shredded (I chopped up baby carrots)
1/3 cup Parmesan cheese
1/2 cup croutons
Caesar salad dressing, to taste


Directions:
1. Cook pasta according to package. Drain water, rinse with cold water and set aside to cool.
2. Chop grilled chicken in to small chunks.
3. In a large bowl, toss together the veggies, pasta, romaine, chicken, parmesan, and croutons.
4. Add caesar dressing to taste and enjoy!


This salad has great flavor and crunch! 
I wasn't so sure about how I was going to like the addition of the pasta but I loved it!
So did my hubby! And it made great leftovers!! My co-workers thought I had bought it at the store.

BBQ Chicken Pizza

Last week on the Delicious Dish Tuesday link up, Kristin from Hopelessly Ever After posted a recipe for some mouthwatering BBQ Chicken Pizza. It looked so tasty I wanted to try it for myself and let me tell you--- it was so worth it!! This pizza is SO yummy and packed full of great flavor! Put these items on your grocery list because you have to make this.

BBQ Chicken Pizza



INGREDIENTS:
1 can refrigerated pizza crust
1 lb boneless skinless chicken breast, grilled and diced (1 and half chicken breasts)
1/2 green pepper, sliced (I used one whole, small one)
1/2 red onion, sliced
2 tbsp green onions, chopped
2 roma tomatoes, diced
2 tbsp cilantro, chopped
(I kept the cilantro out because my husband doesn't really like it but I'm sure it would be tasty)
1/2 cup BBQ sauce
(I found some Memphis BBQ sauce, Meijer brand that was pretty tasty)
1/2 cup shredded colby jack cheese
1 cup shredded mozzarella


DIRECTIONS:
Preheat oven to 425ยบ. Prebake the crust for about 8 minutes or so, depending on how crispy you like your pizza. Top crust with BBQ sauce and then sprinkle on chicken.  Cover with colby jack cheese. Top with red onion and green peppers. Reserve a few to sprinkle on at the end. Top with mozzarella cheese. Sprinkle green onions, tomatoes, and reserved peppers and onions. Bake for 15 minutes or until crust is golden and crispy. Before cutting, sprinkle on the cilantro, if desired.

Skillet Chicken Parmesan


Skillet Chicken Parmesan


What you need:
  • 4 small/medium chicken breasts
  • 1 jar of sauce of your choice: marinara, tomato w/ basil, etc.
  • 1/4 cup parmesan cheese 
  • 4 fresh mozzarella cheese slices (or shredded if you don't have slices)
  • salt and pepper, to taste
  • pasta of your choice (egg noodles, ziti, etc.)
  • 1/4 teaspoon of basil and oregano
  • can of diced tomatoes-- optional, depending on your sauce!


Make it:
  • Cook pasta according to directions.
  • Heat oil in skillet and chicken. Season to  your taste (salt, pepper, oregano, basil, garlic).  Cook only until just brown on and each side and remove from pan.
  • Let pan cool for a couple minutes and then add your sauce to the pan, being careful not to splash yourself since the pan will still be kind of hot.
  • Add parmesan to pan and stir well. Then add chicken, getting the chicken nice and nestled in the sauce.
  • Simmer chicken in sauce on med/high for approx. 10-15 minutes longer making sure that the chicken is done inside.
  • Place cheese slices or shredded cheese on top of the chicken and place pan under broiler, melting and broiling cheese.
  • Serve chicken over noodles.

Pad Thai Recipe

I love some good Pad Thai take out and there is a place close to our house that has some really yummy Thai food! A few weeks back our friend Stacy made this delicious Pad Thai and since then I just HAD to have the recipe! I made it last week and my husband and I couldn't get enough of it!
Here is today's Delicious Dish Tuesday:


What you need:
  • 1 pkg/box of Rice Noodles (I used the Thai Kitchen Stir Fry Rice Noodles)
  • 1 lb. of chicken or meat of your choice (or omit if vegetarian)
  • 3-4 eggs
  • 1 pkg. extra firm tofu
  • 1 medium bag of bean sprouts
  • 1 bunch of green onion
  • Sugar
  • Vinegar (I chose the rice vinegar)
  • Fish sauce
  • Crushed peanuts
  • Crushed red pepper (to taste)
  • Olive oil


The prep:
  • Cook the noodles according to the package. On the back of the box it states to cover the noodles with saran wrap if not using for a little bit. I drained my noodles once they were done and covered them but I also needed to rinse them lightly with some warm water since they got a little bit sticky.
  • I had to crush my own peanuts because I could not find any in the store. I bought the Planters salted peanuts and put a little in at a time in a food chopper.
  • Cut up your green onion, chicken and tofu.

Make it:
  • This is made in batches.
  • Heat some olive oil in a large stock pot and add approx. 1 cup of chicken.
  • Cook the chicken through and then add one egg, handful of bean sprouts and a handful of tofu (or more if desired).
  • Cook for another minute or two.
  • Then add 3 Tbsp. of crushed peanuts, 1 Tbsp. of vinegar, 2 Tbsp. sugar, 2 Tbsp. fish sauce.
  • Add pinch of green onion and a pinch of red pepper (or to taste, we liked adding more red pepper for a little bit spicier).
  • Cook until heated through.
  • Add to a large (oven safe) bowl or dish. Heat oven to a "keep warm temp" (I did 200 degrees) and repeat the process until everything is gone! I think I made about 3-4 batches. You can always get more ingredients if you have a larger crowd and make more batches! :) 
  • Serve with lemon if desired.

Chicken Pot Pie

Comfort food: food that provides consolation or a feeling of well-being, typically any with a high sugar or other carbohydrate content and associated with childhood or home cooking. (Google)




This week I am posting one of my comfort foods: Chicken Pot Pie. I used to love when my mom would make these when I was younger and I have since developed my own take on the recipe.



What you need:
  • 1/2-1 Tablespoon garlic powder
  • seasoning salt and pepper (to taste)
  • 1/3 cup cream cheese
  • 2/3 cup Oikos greek yogurt, French Onion Dip
  • 1/2 cup chicken broth
  • 1 rotisserie chicken 
  • 3/4 bag of mixed vegetables
  • 1 can of diced potatoes (or fresh if you'd like)
  • package of 2 deep dish pie crusts
(I used to make this with the Philadelphia garlic cooking cream but I could not find any of the cooking creams at Meijer today! :( )

Make it:
  • Preheat your oven to 400 degrees.
  • Shred chicken in to a large bowl.
  • Add mixed vegetables, potatoes, cream cheese, French onion dip, broth and seasonings. Mix well.
  • Lay tin foil on to a cookie sheet and place one of the pie crusts on there. Then place the mixture in to the pie crust. Being careful, separate the other crust from the pie tin and place on top of the first pie crust and mixture. Crust slits in crusts.
  • Bake in oven for 30 minutes, or until crusts is golden brown.
  • Enjoy!!!
