((Easy)) White Chicken Chili


As I was trying to think of what to make for dinner the other night, I grabbed a can of white northern beans, flipped her over to the recipe on the back and decided to roll with it. I had most of the ingredients it requested and made a quick trip to the store for the rest!!

I love how easy they are to make, plus they are so hearty and fulfilling!
Here is an easy White Chicken Chili recipe for a quick weeknight meal.

Ingredients:
  • 2 cans white northern chili beans
  • 1 rotisserie chicken, shredded
  • 1 can chicken broth
  • 1 can cream of chicken soup
  • 1 can green chiles (small)
  • 1 can diced tomatoes
  • 1 can gold/white corn
  • 1 small onion, chopped
  • garlic, salt, & pepper to taste
Make it:
  • Put everything in a stockpot (stir and mix well) and bring to a boil, turn down and simmer for 20-25 minutes!
  • That's it! That easy!!
  • Additional toppings: fritos, avocado, lime, cheese, tortilla chips

'Tis the season for soups! My favorite!

**Crockpot suggestions: Place two chicken breasts in, white an onion soup mix, cream of chicken soup, and garlic, salt & pepper to taste. Cook on HIGH for 4 hours, shred.
Add the rest of ingredients and cook on HIGH for 1-2 more hours!

Fall Faves: Scarves

I'm pretty sure I have already shared this with you, but if you haven't heard you're about to--- Fall is my FAVORITE clothes season! I love everything about it- layers, tunics, leggings, jeans, sweatshirts, the list can go on an on and on! One of my favorite and easiest Fall wardrobe must have is a scarf! Scarves are the perfect accessory as the temps start to cool off! They go with pretty much anything and totally complete your outfit!

Fall Freezer Meal Ideas


Fall can sometimes be the start of the busiest time of the year! Kids are back in school and after school activities resume, some of the last few nice days of the year (at least in Michigan) are here, and the holidays are lurking around the corner. Meal times can be stressful and difficult coming up with ideas and TIME to make them! So, today I wanted to share with you some simple and easy meals that you can freeze and pull out when you're in a pinch for dinner!

My sister-in-law and I spent a recent rainy Saturday afternoon preparing these dishes and I am already taking full advantage of them! We made about 42 burritos (breakfast and lunch/dinner types) and 13 meals.


The meal breakdown:
-2 Lasagnas
-4 Pot pies
-7 Chicken/Broccoli/Rice casseroles
-25 breakfast burritos
-17 black bean and rice burritos


Costs & Things:
-We got aluminum containers for the meals at the Dollar store.
-Tin foil and freezer bags we got from Meijer. (After we rolled the burritos, we wrapped them in tin foil and then stored them in freezer ziploc bags, about 4-5 per)
-We spent around $86 at Costco (there we got 4 rotisserie chickens, 2 big blocks of cheese (cheddar & sharp white), 2 dozen eggs, a ton of tortilla shells, and bacon)
-The rotisserie chickens saved us a ton of TIME! Just needed to shred it and add to our mixes!! I highly recommend this route!
-We spent around $126 at Meijer getting all the rest of our "supplies"! ;)

Sausage Lasagna Roll Ups



I had planned to head to the grocery store today and do some meal planning but as the day got away from me, the grocery shopping sounded less and less like something I wanted to do! So, I figured if I could throw something together for dinner with stuff that I already had, I would worry about hitting the supermarket another day. (I don't like grocery shopping as is, so any way to procrastinate going I am down for!) This recipe's inspiration started with some Bob Evan's zesty sausage (LOVE this stuff!!! Like SO good on/in/with EVERYTHING!!!) I loved that it was pretty quick and easy too!

Sausage Lasagna Roll Ups


-1 package of Bob Evan's zesty sausage
-1 box of lasagna noodles
-1 can of tomatoes with green chiles
-1 small onion
-1 package of cream cheese
-1 jar of homemade tomato juice
-parmesan cheese
-shredded sharp cheese












Make it!

1. Heat oven to 375 degrees
2. Boil water & make noodles
3. Brown sausage in pan
4. Dice onion
5. Once sausage is brown, mix together in a bowl: softened cream cheese, a cup or so of shredded sharp cheese, sausage, sprinkles of parmesan cheese, diced onion, can of tomatoes. I added some garlic powder for a additional flavor. 
6. Pour some tomato juice in bottom of casserole dish. Place mixture on cooked noodles and roll up in pan. Pour rest of tomato juice on top. Bake in oven for 20 minutes. Sprinkle parmesan and more shredded cheese on top, place back in oven and melt. I put mine under the broiler for a bit too, to get that crunch and cripsy on top! (YUM!)

This recipe could easily be tailored and added to or subtracted from! You could substitute a different cheese, add in some mushrooms, do chicken instead!!! Lots of possibilities!

Fall Fashion: Army Green Vest!


Just about two years ago Old Navy released their army-green cargo vest and took the Instagram-fashion world by storm! It hasn't let up and I love it! I'm excited to see my favorites pull their vests back out this Fall and see them style it!
This vest can be worn with pretttyyyy much anything! It is the perfect layering piece! The first look I did was a long sleeve top and you really can't go wrong with stripes! Add booties and some accessories-- BAM, looking fabulous! My second look is: button down. Here I have a plaid top but you could do gingham or chambray too! Third, add your favorite blanket scarf when the temps start to cool off and you are layered up but still looking super cute! Lastly, throw this vest on with a Fall dress and tall boots and you have a perfect work to night combo! I have added links where you can get your own vest if you don't have one yet!!! :) 
Also, if you're not sure about the vest---- I love the cargo jacket look and style too!
