This week I am posting one of my comfort foods: Chicken Pot Pie. I used to love when my mom would make these when I was younger and I have since developed my own take on the recipe.

This week I am posting one of my comfort foods: Chicken Pot Pie. I used to love when my mom would make these when I was younger and I have since developed my own take on the recipe.
What you need:
- 1/2-1 Tablespoon garlic powder
- seasoning salt and pepper (to taste)
- 1/3 cup cream cheese
- 2/3 cup Oikos greek yogurt, French Onion Dip
- 1/2 cup chicken broth
- 1 rotisserie chicken
- 3/4 bag of mixed vegetables
- 1 can of diced potatoes (or fresh if you'd like)
- package of 2 deep dish pie crusts
(I used to make this with the Philadelphia garlic cooking cream but I could not find any of the cooking creams at Meijer today! :( )
Make it:
- Preheat your oven to 400 degrees.
- Shred chicken in to a large bowl.
- Add mixed vegetables, potatoes, cream cheese, French onion dip, broth and seasonings. Mix well.
- Lay tin foil on to a cookie sheet and place one of the pie crusts on there. Then place the mixture in to the pie crust. Being careful, separate the other crust from the pie tin and place on top of the first pie crust and mixture. Crust slits in crusts.
- Bake in oven for 30 minutes, or until crusts is golden brown.
- Enjoy!!!

I LOVE the Marie Calendars chicken pot pies, but they are so full of sodium I had to stop buying them (especially once my husband discovered his high blood pressure issues). This would be a great solution for us; we could have the chicken pot pie we love without all of the sodium. Can't wait to try this!

I'm making a chicken pot pie for dinner tonight!! I usually go the lazy route and use biscuits but I've been wanting to try it with the pie crust - this looks so good and so easy!
