Chicken Salad Recipe




Chicken salad is the perfect, light summer snack or meal! A friend and co-worker brought this combo in to a potluck one night and I loved it!! What I love most about this recipe is that it doesn't use any mayo! (Thanks Kim!) The versatility of it is awesome too! You can eat it as a sandwich on a croissant, as a snack/dip with crackers or bread, or as an appetizer in some phyllo cups!

What you need:

  1. Sweet vidalia onion dressing (approx. 1/2 cup, or to taste)
  2. Shredded chicken
  3. Grapes (approx. handful, cut up)
  4. Celery (approx. 6-8 stalks diced up)
  5. Sliced alomonds (approx. 1/2 2.25 oz. bag)
Make it:
  1. Mix everything together and enjoy!!
**This recipe does not have exact measurements, it's more to your taste and for how big of a group you are making it for!

  7. I love love chicken salad, and can almost eat the entire batch in one sitting. But I make mine with mayo and egg, super simple. Thanks for sharing again this week sweet Ashley :)

  8. I am totally pinning this recipe! I have always wanted to like chicken salad but I can't stand mayo so I never eat it... Can't wait to try this out!
