This week is such an exciting one for me and my little baby blog! First, I LOVE this recipe. It is SO good!! My husband kept going back for more! Second, I have a super big announcement coming on Friday and I can't wait!!! :) Third, this weekend is one of my best friends bachelorette party and it is going to be a BLAST! More on all of this later.... for now, what you came here for today: the recipe.
Stuffed Peppers
What you Need:
- Bob Evans Zesty sausage (This stuff just adds so much flavor!)
- 1 1/2 cups White or Brown Rice
- 4 large green peppers
- 1/2-3/4 of a large onion
- 1/2 can tomatoes (of more if you wish)
- 1/2 Tbsp. Oregano
- 1/2 Tbsp. Basil
- salt & pepper to taste
- 1/2 cup Parmesan cheese
- 1/2 cup Mozzarella cheese
- 2-3 Tbsp. olive oil
Make it:
- Preheat oven to 375 degrees.
- Cook rice according to package and set aside.
- Cut off bottoms of peppers as needed so that they stand up. Cut a circle in the top of the peppers, taking a pretty decent amount.
- Trim the top that you have cut off and throw away the white spine and seeds.
- Place the peppers in a dish with sides, similar in size to the peppers so that they stay upright.
- Chop up leftover green pepper pieces and dice up onion.
- Heat 1 Tbsp. olive oil in skillet and sauté peppers and onions until tender but not brown.
- Remove pepper/onion mixture from pan and set aside.
- Add the other Tbsp. olive oil to pan and brown and sausage. (you may want to drain the pan)
- Add the pepper/onion mix back to the skillet and add the dried spices (oregano, basil, salt & pepper) and tomatoes to taste. (*I don't usually put the tomatoes in but it sounded good and didn't taste too bad. I got the Basil, Oregano and Garlic tomatoes) Heat for 2 minutes or so.
- Add cooked rice and parmesan cheese. Also add a handful of mozzarella cheese too. Heat until just heated through.
- Stuff peppers with mixture, pressing down with a fork or spoon to make sure that pepper is packed full. I often have leftover mixture and just add it to the dish that I am cooking the peppers in.
- Bake in oven for 30 minutes. During the last 10 minutes or so, pull the peppers out and top off the peppers with mozzarella cheese.
- Allow some time to cool, then ENJOY!!!

DeleteStuffed peppers are so tasty! I've made mine in the crock-pot the last few times I've made them- surprisingly it works just as well. And adding sausage instead of ground beef- sounds great, will definitely have to make that change the next time I cook these!
