Oven Roasted Zucchini

Another Pinspired recipe for today's Delicious Dish Tuesday!
I loved making this Oven Roasted Asparagus awhile back and thought I would give zucchini a try for a nice summer treat and it was tasty!!

Ingredients:

2-3 small/medium zucchinis
minced garlic
salt/pepper
olive oil
parmesan cheese



Steps:

Preheat oven to 350 degrees.
First cut zucchini in half lengthwise and then in half again.
Place some tin foil on a cookie sheet and arrange zucchini on it.
I am very bad at measuring when I am cooking but I just mixed everything but the parmesan cheese in a bowl to taste.
Then, I brushed it on the zucchini making sure to get most of the garlic that falls on to the slices.
Sprinkle on parmesan cheese.
Bake in pre-heated oven for 11-13 minutes.

Looks Lately v3.0

I had to laugh the other day when my husband was confused why I was wearing cobalt blue wedges to run some errands and stop pick up a few things at Costco. I promptly responded that I wore them because they matched my outfit of course! ;)

Wearing scrubs for 12 hours 3-4 times a week a lot of times I love dressing up on my days off even if it is to run errands! I enjoy putting outfits together and expressing some of my creativity that way.
 If you look good, you feel good too!

Graphic Tank: {4} Ways


1 GRAPHIC TANK, 4 WAYS



A graphic tee/tank is great and comfy and today I have styled it four different ways so that you can wear it almost anywhere!
Throw it on with shorts out to run errands, with some skinnies out with the girls, to the office with a blazer and heels or with a skirt for date night!
One of these times I will grab my husband to take some pictures for me but until then you get my "real average" selfies! ;)

Chicken Caesar Pasta Salad

This week's recipe is a Pinterest inspiration.
I love caesar salad and this recipe, with the addition of pasta, is the perfect blend of salad and pasta for summer!!

Chicken Caesar Pasta Salad



Ingredients:

1 1/2 chicken breasts, grilled
6 oz. penne pasta
4 cups romaine lettuce, chopped or shredded
1/2 med. size cucumber or 2 small ones
1 roma tomato, chopped
2-3 green onions, chopped
1 carrot, shredded (I chopped up baby carrots)
1/3 cup Parmesan cheese
1/2 cup croutons
Caesar salad dressing, to taste


Directions:
1. Cook pasta according to package. Drain water, rinse with cold water and set aside to cool.
2. Chop grilled chicken in to small chunks.
3. In a large bowl, toss together the veggies, pasta, romaine, chicken, parmesan, and croutons.
4. Add caesar dressing to taste and enjoy!


This salad has great flavor and crunch! 
I wasn't so sure about how I was going to like the addition of the pasta but I loved it!
So did my hubby! And it made great leftovers!! My co-workers thought I had bought it at the store.

Friday the 13th!!!

Superstitions:  a belief or way of behaving that is based on fear of the unknown and faith in magic or luck : a belief that certain events or things will bring good or bad luck  
(according to Merriam-Webster online).
Now, don't get me wrong... I have a few of these that I may or may not believe (mostly centered around work!) but superstitions are what Friday the 13th is all about, right!?!?

Now, I am no green thumb so it makes me ecstatic that some trees/plants that we planted a couple years ago are 1) still alive and 2) getting bigger and prettier!!

It may seem silly, but you CAN still use your crockpot in the summer!
I know it's all about grilling come summertime but for those busy week nights that you just need something quick, it's nice to have a meal in the crockpot waiting for you!
A few months back I posted this recipe for Shredded Chicken Sandwiches in the crockpot and they are DELICIOUS!!! Last night I did a version with BBQ sauce and it did not disappoint!
