Beef & Noodles




Sundays are usually pretty mellow. 
Yesterday was one of those slow and steady kind of Sundays, which I do not mind at all!
I also feel like Sundays are for hearty meals, like a roast.
I made a roast in the oven yesterday and then used it for this beef & noodle recipe that my sister-in-law shared with me. YUMMM-Y! And, my favorite part: easy-peasy!

What you need:
-arm roast (whatever size is suitable to your family)
-garlic powder
-onion powder
-sale & pepper
-egg noodles (probably like 1/2 a bag-3/4 would be sufficient)
-beef broth (1.5 boxes)
-roasting pan


What you do:
-Preheat oven to 350 degrees.
-Place the roast (I put mine in frozen) in your roasting pan, season with garlic, onion, salt & pepper to your liking.
-Cover roast and cook in oven for 2-3.5 hours, deepening on your oven and your size roast. When the roast is tender and falling apart, it is done. Check on it throughout the day.
-Next, shred the roast and put in a large pot with 1 box of the beef broth.
-Bring to a boil. Once boiling, add egg noodles and cook until tender. Here I added more broth to cover the noodles. I kind of drained the juices out at the end.
-Once the noodles are cooked, ENJOY!

"You can't step to this backyard swagger"

Last night, my husband and I had just finished dinner and a friend texts me... "Do you want to go to a Miranda Lambert concert tonight??"
Impromptu Miranda concert?
Alright, I am in!

What is a girl to throw together for a badass country girl concert in 30 minutes?
I decided with a lace accented top with button back detail and a sparkly necklace. And I was so glad I had these kick butt sparkly boots on hand to finish the look; I was ready to sing and dance away the night!

Better yet, come to find out our seats are floor seats.... like 12 rows back from the stage floor seats!
Sure thing I was thankful that I had checked my phone!
What a fun, spontaneous, and random night! :)

Mint Love


Spring, or shall I say the anticipation of it, brings out bright and vibrant colors. 
Pastels are really starting to pop in stores right now.
One that I am really loving is mint. I am mint obsessed. 
It is so pretty, soft, the perfect addition of color and it just goes with everything!
 Better yet, I love mint in the winter as well as Spring/Summer. So, you can start wearing it now!

Ramen Noodle Oriental Chicken Salad

Have you heard of Six Sisters' Stuff?
No, it's not the newest girl band... they are six friends who share a blog together to keep them in touch. They have some of the BEST recipes! I have used several of their crockpot recipes and recently just tried their Oriental Ramen Chicken Salad one and it of course, didn't disappoint!
So, today I want to share it with you!

Ingredients--

Dressing:

  • 3/4 cup vegetable oil
  • 4 1/2 tablespoons seasoned rice vinegar
  • 4 1/2 tablespoons sugar
  • salt and pepper to taste
  • (I ended up doubling to fit the amount of salad that I had, just kind of eye-balled to make sure the salad was even coated/mixed. I am SO bad at following actual directions!!)
Salad:
  • I used a rotisserie chicken and shredded it
  • 1 head cabbage-shredded (I used a bag of coleslaw mix and added some matchstick carrots)
  • 1 -2 bunch of green onions, finely chopped
  • 1/4 cup sunflower seeds
  • 3 tablespoons vegetable oil
  • 1 (2 1/2) ounce package of slivered almonds
  • 2 packages of Ramen noodles, crushed in to small pieces.

Directions--
  • In a small bowl, whisk together vegetable oil, rice vinegar, sugar, salt, and pepper. Cover and store in fridge until before serving. In a large bowl, combine chicken, cabbage mix, sunflower seeds; set aside. In a pan over medium heat, warm up vegetable oil. Add crushed Ramen noodles (just the noodles) and cook until slightly brown. Add slivered almonds and continue stirring over heat until golden brown. Once cool, add ramen mixture to the cabbage and chicken mix and stir to combine. Add dressing and toss to coat just before serving to avoid the noodles getting soggy.

I made this for a work potluck and it was delicious!!
