BBQ Chicken Pizza

Last week on the Delicious Dish Tuesday link up, Kristin from Hopelessly Ever After posted a recipe for some mouthwatering BBQ Chicken Pizza. It looked so tasty I wanted to try it for myself and let me tell you--- it was so worth it!! This pizza is SO yummy and packed full of great flavor! Put these items on your grocery list because you have to make this.

BBQ Chicken Pizza



INGREDIENTS:
1 can refrigerated pizza crust
1 lb boneless skinless chicken breast, grilled and diced (1 and half chicken breasts)
1/2 green pepper, sliced (I used one whole, small one)
1/2 red onion, sliced
2 tbsp green onions, chopped
2 roma tomatoes, diced
2 tbsp cilantro, chopped
(I kept the cilantro out because my husband doesn't really like it but I'm sure it would be tasty)
1/2 cup BBQ sauce
(I found some Memphis BBQ sauce, Meijer brand that was pretty tasty)
1/2 cup shredded colby jack cheese
1 cup shredded mozzarella


DIRECTIONS:
Preheat oven to 425ยบ. Prebake the crust for about 8 minutes or so, depending on how crispy you like your pizza. Top crust with BBQ sauce and then sprinkle on chicken.  Cover with colby jack cheese. Top with red onion and green peppers. Reserve a few to sprinkle on at the end. Top with mozzarella cheese. Sprinkle green onions, tomatoes, and reserved peppers and onions. Bake for 15 minutes or until crust is golden and crispy. Before cutting, sprinkle on the cilantro, if desired.

Summer Bucket List 2014

May was a busy month with my college roommate's wedding, spending a week in the Dominican, and then working almost every day since I got back... and here it is JUNE!
Summer is always busy; three months out of the year that us Michiganders must cram in all the [warm] outdoor activities we love to do and enjoy our Great Lakes to the max!!
In honor of the gorgeous days that we have been having and the first official day of summer just around the corner I decided to make a Summer Bucket List. 


Summer Bucket List

1. Go on a Picnic.

2. Explore Northern Michigan.

3. Have a beach day (or several).

4. Try out a new beach.

5. Go on a bike ride.

6. Have a bonfire (or several).

7. Make s'mores.

8. Get Fro-yo.

9. Enjoy a day out on the lake.

10. Go golfing.

11. Go to the Farmer's Market

12. Play tennis.

13. Attend a festival.

14. BBQ/Bonfire/Game Night with Friends.

15. Try a new drink recipe.

16. Have a summer photo shoot.

17.  Enjoy reading a book outside.

18. Go to a Whitecaps game.

19. Make homemade salsa.

20. Build a bonfire pit.

My favorite part of summer is the summer salads! I love pasta salads and fresh salsas. I have a recipe for a cucumber salsa that I can't wait to make--- stay tuned as it will be featured in the next few weeks on Delicious Dish Tuesdays.

I am all about supporting Michigan and I just love these new Michigan tank tops from Michigan Awesome! I have a tee from there that says "Home is Where the Hand Is" and it is so comfy and such a versatile "graphic tee".

Do you have suggestions for a good summer read? 
While I was in the Dominican I finished the first of Janet Evanovich's Stephanie Plum series and I liked that it was interesting and an easy read! I have seen many people reading The Fault in Our Stars and I think that may be my next read.

Monday is my husband's orientation for nurse anesthesia school on the other side of the state, which means only a 2-day work weekend as we will be staying with friends Sunday night. Yippee!!
