Stuffed Pepper Recipe

Hello! Welcome to this week's edition of: Tuesday's Recipe Link Up!
This week is such an exciting one for me and my little baby blog! First, I LOVE this recipe. It is SO good!! My husband kept going back for more! Second, I have a super big announcement coming on Friday and I can't wait!!! :) Third, this weekend is one of my best friends bachelorette party and it is going to be a BLAST! More on all of this later.... for now, what you came here for today: the recipe.


Stuffed Peppers


What you Need:
  • Bob Evans Zesty sausage (This stuff just adds so much flavor!)
  • 1 1/2 cups White or Brown Rice
  • 4 large green peppers
  • 1/2-3/4 of a large onion
  • 1/2 can tomatoes (of more if you wish)
  • 1/2 Tbsp. Oregano
  • 1/2 Tbsp. Basil
  • salt & pepper to taste
  • 1/2 cup Parmesan cheese
  • 1/2 cup Mozzarella cheese
  • 2-3 Tbsp. olive oil


Make it:
  • Preheat oven to 375 degrees. 
  • Cook rice according to package and set aside.
  • Cut off bottoms of peppers as needed so that they stand up. Cut a circle in the top of the peppers, taking a pretty decent amount. 
  • Trim the top that you have cut off and throw away the white spine and seeds.
  • Place the peppers in a dish with sides, similar in size to the peppers so that they stay upright.
  • Chop up leftover green pepper pieces and dice up onion.



  • Heat 1 Tbsp. olive oil in skillet and sauté peppers and onions until tender but not brown.
  • Remove pepper/onion mixture from pan and set aside.
  • Add the other Tbsp. olive oil to pan and brown and sausage. (you may want to drain the pan)
  • Add the pepper/onion mix back to the skillet and add the dried spices (oregano, basil, salt & pepper) and tomatoes to taste. (*I don't usually put the tomatoes in but it sounded good and didn't taste too bad. I got the Basil, Oregano and Garlic tomatoes) Heat for 2 minutes or so.
  • Add cooked rice and parmesan cheese. Also add a handful of mozzarella cheese too. Heat until just heated through.
  • Stuff peppers with mixture, pressing down with a fork or spoon to make sure that pepper is packed full. I often have leftover mixture and just add it to the dish that I am cooking the peppers in.
  • Bake in oven for 30 minutes. During the last 10 minutes or so, pull the peppers out and top off the peppers with mozzarella cheese.
  • Allow some time to cool, then ENJOY!!!

Five on Friday: Week Seven



Happy Friday!
Sorry I missed last week but I am back in the game this week!

I want to try to start eating healthier and am interested in substituting some snacks or even like breakfast or lunch with a smoothie. Have you tried any smoothie recipes lately that you love?!? Any suggestions or recommendations on making them ahead of time and "storing" them? Do you use just a regular glass or do you have some type of cup, especially for on the go, that you use?
 Any tips would be greatly appreciated! Thanks!! :)



 

I know I am a little late to jump on the frozen yogurt band wagon but I have lately fell in LOVE with fro-yo. There is a place really close to our house that I tried a couple of different times and did not see what all the fuss was about.  But, I have found another local place just a little bit further and it is so YUMMY!
Is it bad that I want to substitute some of my meals and just eat frozen yogurt now?!?





I recently tried these crackers and they are so good! They come in a variety of flavors but my favorite is the Cinnamon & Brown Sugar one, it tastes like a big teddy graham!
It is a great alternative to my pop-tarts that I normally turned to! ;)

For those of you who, like myself, have been in a gloomy, wintry state for the past 3-4 months... how great was it have some sunshine and near 60 degree weather recently!?!?!
Wednesday I even raked my lawn in a long sleeve shirt and jeans, it felt amazing to say the least!
Now, if only it would show up and stay that way!!

"The" Cookie Recipe



Nothing makes any day better than a goey, yummy home made chocolate chip cookie!
I am sure everyone has their "go-to" recipe when it comes to making chocolate chips but seriously... there is something about these cookies!! Every time I make them, they disappear SO fast! I chalk it up to the vanilla that I got from Mexico that I use.  Whatever is, you HAVE to try these!!

What you need:
  • 1 bag of chocolate chunks
  • 2 3/4 cups of all purpose Flour
  • 1/4 or pinch of Salt
  • 1 tsp Baking Soda
  • 1 tsp Vanilla
  • 2 Eggs
  • 3/4 cup of white Sugar
  • 3/4 cup of Brown Sugar
  • 1 cup of butter, softened

Make it:
  • Preheat oven to 375 degrees.
  • In a bowl, mix the softened butter, the brown and white sugar and the eggs. Beat until it is light and creamy.
  • Next, add baking soda and vanilla and mix of another minute or two.
  • Add the flour slowly and make sure everything is incorporated.
  • Stir in the chocolate chunks.
  • Form batter in to approx. 1 inch balls and place on cookie sheet.
  • Bake for 8-12 minutes. I like to make sure they are just turning brown and then take them out and let them cool on the pan. They will continue to cook while on the pan. Just make sure you don't over cook them! :)

Weekend Recap

Last week was a little extra busy with me and my husband both working an extra shift, yet this weekend made up for it as we had lots of fun with close friends!! I would say there were some themes to the weekend: pizza, friends, and board/card games! And, the weather warmed up and it was nice to see the sunshine! 

Friday night was spent sitting on the edge of our seats watching the final minutes of both the Michigan and then the Michigan State games. Two great wins (only to break everyone's hearts on Sunday-- boo!!)

Saturday we got together with some girls I work with (and who are my close friends as well)! Last year we started a kind of tradition with pizza night. It is a friendly competition where each couple creates a pizza to their liking and everyone samples all the pieces and chooses a "winner". It is a lot of fun and afterwards we play games and drink wine/beer!! :)







This year before we got our game night on, my friend's girls taught us how to loom!






Sunday turned out to be a nice day with some sunshine so we took the dogs for a walk. Right now we are watching a dog of one of the physicians I work with too. This is them enjoying some sunshine! (There is MUCH needed spring yard clean up to do!)



That night we went to a friend's house for a monthly get together where we all have a dinner together and then hang out and play board/card games! This month we all chipped in for pizza.  I can't wait until it warms up and we can start grilling out!!

Closet Remix Challenge: Week Four

I can't believe this is the last week of outfit posts for the Closet Remix Challenge! 
I think it is crazy how fast March flew by!
I have had a lot of fun getting creative and finding new ways to wear current pieces in my closet. I am excited to see what I can come up with once the weather starts to warm up too! I am SO looking forward to some warmer temps but must confess I will slightly miss wearing layers. These Michigan legs need some color before showing them to the world! (haha)
