Sausage Lasagna Roll Ups



I had planned to head to the grocery store today and do some meal planning but as the day got away from me, the grocery shopping sounded less and less like something I wanted to do! So, I figured if I could throw something together for dinner with stuff that I already had, I would worry about hitting the supermarket another day. (I don't like grocery shopping as is, so any way to procrastinate going I am down for!) This recipe's inspiration started with some Bob Evan's zesty sausage (LOVE this stuff!!! Like SO good on/in/with EVERYTHING!!!) I loved that it was pretty quick and easy too!

Sausage Lasagna Roll Ups


-1 package of Bob Evan's zesty sausage
-1 box of lasagna noodles
-1 can of tomatoes with green chiles
-1 small onion
-1 package of cream cheese
-1 jar of homemade tomato juice
-parmesan cheese
-shredded sharp cheese












Make it!

1. Heat oven to 375 degrees
2. Boil water & make noodles
3. Brown sausage in pan
4. Dice onion
5. Once sausage is brown, mix together in a bowl: softened cream cheese, a cup or so of shredded sharp cheese, sausage, sprinkles of parmesan cheese, diced onion, can of tomatoes. I added some garlic powder for a additional flavor. 
6. Pour some tomato juice in bottom of casserole dish. Place mixture on cooked noodles and roll up in pan. Pour rest of tomato juice on top. Bake in oven for 20 minutes. Sprinkle parmesan and more shredded cheese on top, place back in oven and melt. I put mine under the broiler for a bit too, to get that crunch and cripsy on top! (YUM!)

This recipe could easily be tailored and added to or subtracted from! You could substitute a different cheese, add in some mushrooms, do chicken instead!!! Lots of possibilities!

Fall Fashion: Army Green Vest!


Just about two years ago Old Navy released their army-green cargo vest and took the Instagram-fashion world by storm! It hasn't let up and I love it! I'm excited to see my favorites pull their vests back out this Fall and see them style it!
This vest can be worn with pretttyyyy much anything! It is the perfect layering piece! The first look I did was a long sleeve top and you really can't go wrong with stripes! Add booties and some accessories-- BAM, looking fabulous! My second look is: button down. Here I have a plaid top but you could do gingham or chambray too! Third, add your favorite blanket scarf when the temps start to cool off and you are layered up but still looking super cute! Lastly, throw this vest on with a Fall dress and tall boots and you have a perfect work to night combo! I have added links where you can get your own vest if you don't have one yet!!! :) 
Also, if you're not sure about the vest---- I love the cargo jacket look and style too!

Fall Basics


Fall is right around the corner and it's pretty much my favorite season for clothes!!! :)
I love sweatshirts/sweaters, jeans, booties, long sleeves... pretty much everything about Fall closet staples!
While browsing around the clothes section at Target the other day (go figure, I went in there for a baby shower gift not clothes! ha!) I found these awesome tops in the most perfect Fall colors!
They are super soft (feel like butter!) and I love that they are the textured, "long-john" style. These would be cute just by themselves with jeans but they are also the perfect layering piece!
I've put together a few outfits with the maroon colored top, but really any of the colors could sub in!
They also had a navy blue one, black, and one that was more of a red color. I couldn't decide which color I loved so I bought four (haha!) Oh, but I forgot to mention that they were on sale 2/$20 and that helped lead to the purchase of double what I may have!! Target strikes again!

Blog Hiatus Coming to an End!!!





Hello there!
If you have been around these parts since the beginning first, THANK YOU!!! Second, you may have noticed that I have been more than just a little M.I.A., posting has been spotty, and I have pretty much faded! Well, many changes have occurred since this adventure started and now that things are settling in to a new normal I've decided that I want to get back to sharing my thoughts and experiences with YOU!!

So, WHAT has changed!?! WHAT has been going on!?
Gosh, I sit here trying to think of WHERE to start!
Soon after my husband started Nurse Anesthesia school, I decided to make my own career transition at work. I found myself becoming very jaded, dragged down, and constantly looking for a change.  Luckily in nursing, there are so many different paths to choose from when you're starting to feel like you need something different! I decided to switch departments and went from working twelve hour night shifts in the emergency department to five days a week in the operating room. It was a very difficult transition for me as emergency nursing holds a special place in my heart, and looking back now, I think there were SO many changes happening all kind of at once that a lot of things took a back seat for awhile! AKA, my bloggity blog!



I used to think of myself as someone that is OK with change but after making a pretty significant career change, I don't know if I am! haha! Leaving your comfort zone is a REALLY hard thing to do and I find it crazy how long sometimes the transition can be until you find new comfort in your situation! Stepping out of what is super familiar into something totally unknown breaks down your confidence too! I feel as though I was trying to re-discover a whole new path, substituting things here and there (LuLaRoe, etc),  to try to find new confidence in an unfamiliar setting. When things are foreign we often get in our heads and things get even more confusing in our minds. Sometimes WE can be our biggest enemies!!  CONFIDENCE, COMFORT, GROWTH!!!  I used to think, "Why would anyone care to listen to what I have to say?" Then, people would tell me "I love reading your blog!" That was the best hearing that!! And here, I abandoned you all and left you out high and dry! So, the question now becomes why NOT!?!? Put yourself out there, step outside of your comfort zone, be a little crazy, don't hold back!



Well, with the blog hiatus coming to an end, I hope that you all will still follow along and share life's silly moments with me! This blog may not be a big budget production and there may not be any fancy macaroons here but what it is, is REAL. I'm still figuring it all out, and I'm not perfect by any means, but what you see, is what you get! :)
