Fall Style Inspiration: Layers


I totally look forward to Fall fashion; I love boots and sweater weather! But, sometimes I'm not quite ready to part with my favorite tees and tanks from the previous season. 
The perfect solution: Layer up!! 
This is especially key when the weather is that "in-between" temperature. It is no longer warm enough to wear just your tank or tee yet, not super chilly for a bulky sweater.


I have chosen this striped tank from Target as my "base". 
I have a serious obsession with stripes. I mean let's be real, I have never met a stripe I didn't like!
The material is super comfy and soft and the stripes allow for some fun pattern mixing.
Here are four ways I have styled this tank differently including a jean jacket, cardigan and scarf, military jacket, and under a plaid top.

{Mini} Chicken Pot-Pies

There are so many things I love about Fall and Fall Comfort Foods is one of them!!
I have continued on my freezer meal kick while adjusting to this new lifestyle of my husband being a student. I thought of the idea of making mini pot pies so that you can pull them out, unthaw, and eat at your leisure instead of unthawing a whole pie! Perfect for one person! And, the mini version of everything is so stinking cute!
So, here they are and frankly I think they are adorable! :)



First, mix together all of your ingredients. 
Corn, potatoes, carrots, soup, chicken broth, shredded cheese, spices.


Next, take your dough roll and lay it out on a cutting board. 
Cut the dough in half length-wise and then in thirds to make 6 squares.



Next step is to put your squares in a muffin tin and then fill them up!
Once full, fold over the tops.


Bake at 350 degrees unit golden brown (approx. 15-20 minutes).



{Mini} Chicken Pot Pie Recipe

Ingredients:
1 can of diced potatoes
1 can of carrots
1 can of corn
1 can of cream of celery soup
8 oz. of chicken broth
1 large handful of shredded cheddar cheese
2 cans of Pillsbury seamless dough sheet
salt, pepper, onion & garlic powder to taste
rotisserie chicken (shredded)

Directions:
Mix all of your ingredients together in a medium-large size bowl.
Roll your dough sheet out on a cutting board and cut in half length-wise and then in thirds the other way to make 6 squares.
Place your squares in each individual muffin tin.
Fill with your stuffing.
Bake at 350 degrees for 15-20 minutes or until golden brown.
Eat right away or if preparing to freeze:
-allow minis to fully cool on a cooling rack.
-wrap them in tin foil and then place in a freezer-safe tupperware dish.
-when ready to eat, pull them out from the freezer and either heat in the oven or microwave until warm.

Fall style inspiration: {Plaid scarf}


Plaid is on huge style trend for this Fall and when I saw this plaid scarf at Forever 21 for ONLY $6, I was in plaid bliss!! It is a major score and the perfect Fall accessory! I mean what more could you ask for: a chunky & cute scarf for the cooler temps, on trend style, and a stellar deal!?!?

Freezer Burritos

Last week marked the official start of school for everyone (who hadn't already started), including the newest student in our household-- my husband!!

To help with ease of meals for him, I made two different kinds of burritos that we froze. They turned out to be really delicious and froze great! I was worried with freezing the tortilla shells that they would get soggy over time but, I took one to work the other day with me and it was yummy!


Variety #1: Black Bean and Rice Burritos


Ingredients:
  • 3 cans of black beans
  • 3 cups of rice
  • 1 can of diced tomatoes
  • 2 packets of taco seasoning (or make your own with this recipe here)
  • 8 oz of pepperjack cheese, shredded.
  • 8 oz. monterey jack cheese, shredded.
  • This recipe makes approx. 16-20 burritos (accommodate with that many shells)















Make it:
  • Make your rice according to package.
  • Combine all ingredients in a large bowl.
  • Place 1-2 tablespoons of the filling on a tortilla, roll up like a burrito- tucking in the ends.
  • Wrap the burrito in tin foil.
  • Place in a freezer bag.
  • Pull out of freezer when you are ready to eat and microwave 1-3 minutes, to warm.
Variety #2: Beef, Refried Beans, & Rice Burritos

Ingredients:

  • 1 can of refried beans
  • 2 cups of rice
  • 1 lb. of ground beef
  • 1 can of diced tomatoes
  • 1 can of enchilada sauce
  • 1 can of golden & white corn
  • 1 package of shredded mexi-cheese
  • chili powder, cumin, onion powder, and garlic all to taste.
  • This recipe also makes 16-18 burritos (accommodate with that many shells)










Make it:

  • Cook ground beef in a skillet until browned.
  • Make rice according to package.
  • Mix all ingredients together in a large bowl.
  • Place 1-2 tablespoons of mix on a tortilla shell.
  • Wrap it up like a burrito, tucking in the ends.
  • Wrap the burrito in tin foil and place in a freezer bag.
  • When ready to eat, pull burrito out of freezer and microwave 1-3 minutes, to warm.













I enjoyed mine with a little guacamole on top!!

Homemade Granola Bars




Welcome, I am back at the Delicious Dish Tuesday and this week I have some awesome homemade granola bars that make the perfect snack!
These bars are gooey, chewy, and yummy!!
There is really great flavor with chocolate and peanut butter but also oats, dried fruit, and flax seed!



Ingredients:

1 cup dried oats
1/2 cup peanut butter
1/3 cup honey
1/2 cup ground flax seed
1 tsp vanilla
1/2 cup chocolate chips
1/4 cup peanuts (optional)
1/4 cup dried cranberries


Make it:

Mix everything together in a large bowl really well.
Refrigerate for 30 minutes.
Then roll in to balls or spread on to a platter to make in to bars.
If making in to bars, after I spread it on the dish I put it in the freezer for a little bit so that it would stick together better before cutting them up.
Store in an airtight container refrigerated!

Weekend Recap: Labor Day Weekend 2014

Happy Labor Day!! 
I have been fortunate to have the last five days off and today I am sharing with you
 some of what I have been up to!

:: F R I D A Y ::


I mentioned that Friday my hubby and I were going to hit the outlets
 and do a little bit of shopping and we sure found some great deals!! 
He got multiple pairs of dress pants for school for $15 including brands like 
Banana Republic and Calvin Klein. 
I found some new shoes for work (I love the stripes, so fun!!!) and some great Fall pieces!
Everything at Banana Republic was 50% off and it was hard not to go too crazy!! 


:: S A T U R D A Y ::



Saturday we celebrated my niece, Addyson, turning two!!
We had a party in the park and she loved it!
She was so fun to watch open her presents and was so excited about each one.
I may be biased but I think she is the cutest!!




:: S U N D A Y ::



We have been a little behind on laundry so Sunday consisted of multiple loads of laundry 
and then a trip to Costco.
Have you tried these barkThins?? They are amazing!! Perfect for when you want a 
little chocolate fix... dark chocolate, sea salt and almond! YUM!!!


Later, we took advantage of the nice weather and went to the park down the road and played some tennis while the pups hung out watching kids play.


The night and the weekend were finished with some reading on our back deck.
It was such a gorgeous evening!!

It was a great relaxing holiday weekend!
